It all started with a doll that played music. I'm wondering if it played only one song or if it could change its tune?

The Jaquet droz doll can play about 5 songs.
The fingers actually press the keys.
Most french paper mache dolls only play one song. There are modern dolls what play with a simple music box movement.
Edison made dolls what had record players in the. A bit spooky. Supposedly he destroyed most of them. A dozen or so are known to exist and quite rare. Some of them have been xrayed and the music groves used to playback the recordings.
Modern stuff like chatty cathy, and others more recent use microcontrollers and shape metal memory alloys. I think there was a Twilight zone about this.
The term "Uncanny valley" is often used to refer to when something looks too human. This also applies to CGI and AI images.

Yes, I remember: "Hello, I'm Chatty Cathy, and I'm going to kill you". The Twilight Zone was quite well done.
